One of my favorite dishes to make since moving to Texas!
This half smooth half chunky guacamole is the best dip for tortilla chips, great on eggs, in sandwiches, burgers, and so much more!
I love my guac chunky but with a smooth creaminess.
To achieve this, I mash half the avocados first and then add in the rest of the cubes when incorporating the vegetables. This way, you get the variety of having both chunks of avocado and the smooth creaminess of a well mashed guacamole. Best of both worlds! If you’d prefer super chunky or smoothe guac, just adjust when you add in the avocados.
The guacamole tastes best if you let it sit in the refrigerator for an hour or so
to let the flavors come together, but you can eat it fresh of course if you’re impatient or in a rush! To store in the refrigerator, use clingfilm to press onto the guacamole so theres no air touching it. I like to press the film onto the sides too then let it hang off the top and close the lid over it. This will keep the guacamole from going brown. You can also squeeze some lime on top to keep it fresh.
INGREDIENTS
- 3-4 avocados (small hass)
- 2 tomatoes
- 1/2 white onion (medium size)
- 1/2 jalapeno
- 1 clove garlic (small)
- 1 lime (juice, to taste)
- 1-1 1/2 tsp salt
- 1/4 cup cilantro chopped
INSTRUCTIONS
Dice tomatoes, onions, and jalapenos into small cubes (onion and jalapeno should be diced finely so it’s not too chunky)
Cut your limes for squeezing later, and chop up the cilantro
Grate your garlic clove (I like using my microplane grater/zester to make it very fine)
Chop avocados into cubes. I like to slice the avocado while it’s in the shell, and scoop it out with a spoon.
Add half the avocados, the grated garlic, salt, and lime juice to a bowl. Mash together until it’s smooth.
Add in the rest of the ingredients and lightly mix together until everything is incorporated.
Cover the top of the bowl with a cling film, pressing it onto the guac so there’s no air in the middle (this will keep it from browning). Let it rest in the fridge for an hour for best flavor. Enjoy!
