This recipe might take only 10 minutes, but is packed with flavor!
All you need is a couple of packs of Maggi noodles, (you can find this at any South Asian grocery store), an egg, some sliced onions, green chilies, and oil.
For this dish, you want to undercooked the noodles a little bit as it will continue cooking while it fries.
If you boil it for the full two minutes as per packet instructions, the noodles might get a little too soft while it sits in the strainer in it’s on steam. I like to cook it for just over minute, you will know they’re done when they lose the boxy shape of the dry noodles.
Adding a good amount of oil to this recipe is what really gives it that umph!
The oil enhances the flavor of the seasoning pack when you fry it, and also keeps the noodles nice and flaky so they don’t stick together as they do tend to get sticky/mushy sometimes, especially if over cooked while boiling. You can of course add as little or as much as you want. I usually do a couple tablespoons. I like the noodles to all have a very very thin layer of oil on them, but not be overly oily at all.

INGREDIENTS
- 2 packs maggi noodles (with seasoning packs)
- 1 egg (+ salt)
- 1/4 cup white onion (finely sliced)
- 3 green chilis (split)
- oil (as needed)
INSTRUCTIONS
Slice your onions finely. Boil your noodles for a minute and drain.
Heat your pan on medium, add in some oil, then your whipped egg, and a dash of salt.
Cook until just firm, chopping your egg up into small pieces, then take it out of the pan.
Add in more oil to the same pan, wait for it to heat up, then add in your onions. Fry until they brown. Then add in your split chilis. Fry for a minute.
Then throw in your cooked noodles, and fried eggs. Stir everything together well.
Then add in your masala packets. Mix and fry for a few minutes until all the strands are uniformly covered with the masala. Serve hot and enjoy!
